Ingredients

  • 6 eggs room temp seperated
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 1/4 cup dark rum
  • 1/2 cup sugar
  • 1 1/2 cups all purpose flour
  • 1 tbsp baking powder

Preparation

Step 1

1. preheat oven to 350
2. seperate eggs
3. beat the egg whites,with electric mixer until foamy and soft peaks form, about 3 min. add sugar, do not overbeat, better if the whites are on the softer side
4. add egg yolks one at a time
5. sift flour with baking powder and fold into the egg mixture in three parts, alternating with whole milk using a rubber spatula. begin and end with the flour
6. pour batter into cupcake pans, fill 3/4 full,bake for30-35 min using toothpick method
7. as the cakes are baking, mix in a bowl the sweetened condensed milk, evaporated milk, heavy cream and run
8. remove cupcakes from oven, and pierce them several timeswith a skewer. while they are still hot spoon the milk mixture over the cupcakes. give the mixture time to soak into each cake and then repeat the process until all the liquid is gone.
9. allow the cupcakes to rest for 4 - 6 hours before frosting

Whipped frosting
1 cup whipping cream
1/2 to 1 cup powdered sugar
1/2 tsp vanilla extract

pour the cream into a bowl and beat with mixer until cream begins to thicken and form peaks. about 3 minutes, add the powdered sugar and vanilla. mix and taste, if the 1/2 cup sugar isn't sweet enough add the remaining sugar to suit your palate. frost the cakes
