Ingredients

  • 2 pounds ripe tomatoes, chopped
  • 1 potato, peeled and diced
  • 2 tsp sugar
  • 1 tsp salt
  • freshly ground pepper to taste
  • 1 tbsp dried basil
  • 1 cup chicken stock
  • 1/2 cup sour cream
  • cayenne pepper (optional)

Preparation

Step 1

Combine tomatoes, potatoes, sugar, salt, pepper, and basil in saucepan. Cover and cook on low for 20 minutes until potatoes are tender. Stir frequently. Add chicken stock, cook for 3 minutes. Press through a food mill or sieve and return to pot.

Prior to serving, combine 1 cup of tomato mixture with sour cream, stir until smooth. Return to soup pot.

Serve hot.
