Ingredients

  • 1/2 box cherry tomatoes halved
  • 2 zuchinni halved lengthwise cut into 3 cm lengths
  • 2 baby eggplants or 1 globe eggplant cut in half lengthwise and the cut into quarters then cut them in half across
  • 2 T olive oil
  • 2 t rosemary

Preparation

Step 1

Combine vegetables with 1 1/2 oil, rosemary salt and pepper. Toss Place in large roasting pan
If eggplant sections are large start them roasting 10 mins earlier then add rest of veges
Roast them for 15 mins more or until all are tender. Throw some spinach in to wilt over hot veges in pan for 2 mins.

Leave skin on eggplants
