Southern Style (Vegan!) Collard Greens

Ingredients
- 1 tbl olive oil
- 1 tbl vegan butter (I use Earth Balance)
- 1/2 large onion, chopped
- 1 tsp red pepper flakes
- 1 clove garlic, finely chopped
- 1 pound of collard greens, washed, de-stemmed, and chopped
- 3 cups vegetable stock
- 2 tomatoes, seeded and chopped
- Salt and pepper to taste

Preparation
Step 1
In large pot over medium heat, heat oil and vegan butter. Saute the onions until slightly softened (about 2 mins) and add the red pepper flakes and garlic. Cook for about another minute.
Add collard greens and cook another minute. Add vegetable stock, cover, and bring to a simmer. Cook until greens are tender- about 40 mins.
Add tomatoes and season with salt and pepper.
