SUMMER JELLIED SALAD
Red and green layers - Christmas in July. This is extraordinary.

Ingredients
- 1-1/2 cups boiling water
- 3 oz. package of strawberry-flavored (or other red) gelatin (jelly powder)
- 8 oz. can of crushed pineapple, drained
- 1-1/2 cups boiling water
- 3 oz. package of lime-flavored gelatin (jelly powder)
- 4 oz. light cream cheese, softened and cubed
- 1 cup frozen whipped topping, thawed
- (or whipped cream)
Preparation
Step 1
Stir first amount of boiling water into strawberry gelatin in medium bowl until gelatin is dissolved. Add pineapple. Stir. Chill, stirring and scraping down sides occasionally, until syrupy. Turn into lightly greased 6 cup mold or deep bowl. Chill for about 10 minutes until slightly tacky on surface and almost firm.
Stir second amount of boiling water into lime flavored gelatin in medium saucepan until gelatin is dissolved. Add cream cheese. Heat and stir until cream cheese is melted and mixture is blended. Chill until thick and syrupy.
Fold whipped topping into cream mixture. Carefully pour over first layer. Chill for several hours until firm. Loosen salad in mold. Invert onto dampened serving plate. Dampness makes it easier to center mold on plate.
