Step 1

Line an 8x12 inch baking pan with aluminum foil. Place a 2 1/4 lb center cut salmon fillet (1 1/2 inches thick) in pan. Then mix 1 c soy sauce, 1/4 c rice vinegar, 1/4 c fresh squeezed lemon (2 lemons), 2 tbsp oyster sauce, 1 tbsp fish sauce, 1 tbsp toasted (dark) sesame oil, 1 1/2 tsp chili paste, 1/2 c sliced scallions (2 scallions), 2 tbsp minced garlic (8 large cloves), 2 tbsp minced fresh ginger. Pour 1/3 of soy sauce over salmon. Sprinkle 1 1/2 c panko over fish. Then pour the rest of the soy sauce mixture evenly over the panko. If any falls off, spoon it back on. Then set aside for 15 minutes. Preheat the oven to 500 degrees. Roast the salmon for 18-20 minutes or about 12 minutes per inch at the thickest part. The internal temperature should be 120 degrees. Remove from oven and wrap tightly and let rest for 15 minutes. Serve hot or at room tempeature.
