Ingredients

  • 2

    c fresh or frozen unsweetened sliced rhubarb, thawed and drained (10 oz fresh, or 16 oz frozen)

  • 2

    medium apples, cored, peeled, and sliced

  • 1/2

    c sugar

  • 1

    T cornstarch

  • 2/3

    c oatmeal

  • 1/3

    flour

  • 1/4

    c packed brown sugar

  • 3 1/2

    light margarine

Directions

In large bowl, combine the first 4 ingredients. Stir to mix well. Let stand for 1 hour. Spoon into an ungreased 8 x 8 pan. Preheat oven to 375. In medium bowl, stir together the topping ingredients except margarine. Using a pastry blender, cut in margarine until mixture resembles course crumbs. Sprinkle topping over rhubarb mixture. Bake uncovered for 30-40 minutes or until topping is light brown. Let cool for about 20 minutes before serving. 6 servings 216 calories
