Ingredients

  • 4

    large russet potatoes, cleaned

  • Olive Oil for drizzling

  • Salt and Pepper to taste

  • 3

    tbsp butter

  • 3

    large onions, thinly sliced

  • 1/4

    c heavy cream

  • 1

    c shredded Fontana or Gruyere cheese

  • 1/2

    c grated Parmigiana cheese

Directions

1. Preheat oven to 400F 2. Rub potatoes with oil, season with salt and pepper. Prick skins with a fork 3. Bake 1 hour until done. Cool 4. Halve the potatoes lengthwise down the center 5. Melt butter in pan over medium heat. Add onions and season with salt. Cover pan and cook 10 minutes, stirring occasionally. Uncover pan and cook an additional 20 minutes, stirring occasionally. 6. Scoop out meat of potato into bowl, leaving skins intact. Mash with salt, pepper, cream, and cheese. Stir in onions. 7. Stuff skins with potato mixture, top with Parmigiana 8. Bake another 20 minutes until hot through 9. Serve 1 as side dish or 2 as main course
