  • 2 2 2 small onions, chopped
  • 2 2 2 celery stalks, shopped
  • 1 1 1 red pepper, chopped
  • 8 8 8 oz turkey kielbasa, cut into1/2 in pieces
  • 1 1 1 lb boneless skinless chicken breast, cut into bite sized pieces
  • 1 14 1 14 1 14 oz can diced tomatoes
  • 2 15 2 15 2 15 oz cans Eden Organic Rice and Beans

Preparation

Step 1

In a large nonstick skillet, heat oil over medium high heat. Add onions, celery, red pepper, and kielbasa. Cook, stirring occasionally, until vegetables soften and brown lightly. 6 minutes. Add chicken and tomatoes; cook, stirring frequently until chicken is no longer pink throughout, about 2 minutes. Stir in rice and beans; cook until hot.
