N'awlins Okra Stew

NOTE: This is a cajun meal but is rather tame in terms of hottness. If desired toss in more cajun seasoning at start of cooking process. May also be added at the end of cooking but you will get more flavoring if you add it at the start of cooking instead.

Ingredients

  • 2 Tbs vegetable oil
  • 1 large purple onion, coarsely chopped
  • 1 red or green bell pepper, diced
  • 1 1/4 lbs fresh tomatoes, coarsely chopped
  • 1 1/4 lbs fresh okra, washed, stem ends trimmed off
  • 2 large cloves garlic, minced
  • 1/2 tsp. Cajun seasoning
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried marjoram
  • 1/4 tsp. fennel seeds, crushed in a mortar and pestle
  • 1/2 tsp. salt or to taste
  • Freshly ground black pepper to taste
  • 2 Cups water
  • THICKENER DO NOT ADD AT START OF COOKING
  • 2 Tbs cornstarch
  • 2 Tbs water
  • or dried potato flakes

Preparation

PREPARATION

Add vegetable oil to cooker and brown onions and peppers.
After browning is completed add all remaining ingredients and stir.
Cook under high pressure for 4 minutes and then use natural pressure
release.
After pressure is released open cooker.
In a small bowl combine cornstarch and water and mix as good as
possible then add to hot contents of cooker.
Stir to mix and thicken the stew.
Mix and continue to heat for a minute or two or until thickened as you
like it.
Serve over cooked rice.
