Ingredients
- 1 pint grape tomatoes
- ½ cup thinly chopped onions
- 1 garlic clove thinly chopped
- 16 kalamata olives pitted and halved
- 3 tablespoon drained capers, rinsed
- 3 tablespoons olive oil
- 4 boneless chicken breasts halves
- coarse salt and pepper
Preparation
Step 1
1. Toss tomatoes, olives, capers and 2 tablespoons of olive oil together.
2. Rinse chicken and pat dry.
3. Season both sides with salt and pepper.
4. Warm oil, and sauté onion and garlic.
5. Sauté chicken until golden brown.
6. Add additional oil, olives and capers and cover and cook for about 15 minutes.
7. Add tomatoes and cook an extra 3 minutes.
