Ingredients
- 12 oz skinless boneless chicken breasts
- 2 T light soy sauce
- 2 T white wine
- 1 clove garlic
- 1 T oil
- 8 oz fresh mushrooms, sliced
- 1 red bell pepper, cut into thin strips
- 6 oz pea pods, strings removed
- 1/2 c chicken broth
- 2 t cornstarch
- 1/2 t red pepper flakes
- 1/2 c sliced green onions
- 2 cups cooked rice

Preparation
Step 1
Place chicken strips in bag or bowl. Mix soy sauce, wine and garlic and pour over chicken. Cover and chill up to 4 hours. Add oil to wok. Add mushrooms and pepper; stir fry for 2 minutes. Add pea pods and stir fry 1 minute. Remove vegetables from wok. Drain chicken, reserving marinade. Stir fry chicken 3 minutes or until no longer pink. Combine broth and cornstarch. Add it to reserve marinade. Cook and stir until mixture comes to full boil. Add vegetables; stir to coat. Add red pepper flakes and onions. Serve over rice.
