Ingredients

  • 12

    oz skinless boneless chicken breasts

  • 2

    T light soy sauce

  • 2

    T white wine

  • 1

    clove garlic

  • 1

    T oil

  • 8

    oz fresh mushrooms, sliced

  • 1

    red bell pepper, cut into thin strips

  • 6

    oz pea pods, strings removed

  • ½

    c chicken broth

  • 2

    t cornstarch

  • ½

    t red pepper flakes

  • ½

    c sliced green onions

  • 2

    cups cooked rice

Directions

Place chicken strips in bag or bowl. Mix soy sauce, wine and garlic and pour over chicken. Cover and chill up to 4 hours. Add oil to wok. Add mushrooms and pepper; stir fry for 2 minutes. Add pea pods and stir fry 1 minute. Remove vegetables from wok. Drain chicken, reserving marinade. Stir fry chicken 3 minutes or until no longer pink. Combine broth and cornstarch. Add it to reserve marinade. Cook and stir until mixture comes to full boil. Add vegetables; stir to coat. Add red pepper flakes and onions. Serve over rice. 4 servings 330 calories
