Relish - Mexicali Corn Relish (like Valle Luna's)

Ingredients

  • 6 ears yellow corn (in husks)
  • 2 poblano chiles
  • 2 red jalapeno chiles
  • 1/2 red onion
  • 1/4 cup chopped fresh cilantro
  • 1 Tbsp. lime juice
  • salt and pepper
  • BBQ to taste

Preparation

Step 1

Grill corn over charcoal fire, turning often, until the first layer of husk is completely charred, could take 5-10 minutes.

Roast poblanos on grill until they are charred. When cooled, remove the charred skins and seed either under running water or in a bowl of water.

Cut kernels of the cobs. Cut the roasted poblanos, the jalapenos, and the red onion into small dice. Mix the corn, poblanos, jalapenos, onion and cilantro together and season with the line juice and salt and pepper to taste.

Add BBQ sauce to taste.
