Turkey Tenderloin with an Apricot Sauce

Turkey tenderloins make this roasted turkey dish quick to make. The apricot sauce makes a nice glaze on the turkey. Delicious any time of year.
Ingredients
- 1 (1.25-pound) package turkey tenderloins
- 1/4 teaspoon each salt and fresh ground black pepper
- APRICOT SAUCE
- 2/3 cup apricot preserves
- 2 cloves garlic,minced
- 2 tablespoons dijon mustard
- 2 tablespoons reduced -sodium soy sauce

Step 1
Heat oven to 400°F. You'll need a roasting pan lined with foil and coated with non-stick spray Season turkey tenderloins with salt and pepper ;place in prepared pan.
In a small bowl, combine sauce ingredients. Mix well; spoon some over turkey. Roast 35-40 minutes, basting frequently with the sauce, until an instant-read thermometer inserted into the thickest part registers at least 160°F. Let turkey rest for 10 mins before cutting it crosswise into 1/2" thick slices.
