sweet potatoes (good shape for twice baked potatoes)
cloves garlic, minced
teaspoon chipotle chili powder (or regular chili powder)
whole chipotle, minced
cup chopped cilantro
cups mozzarella cheese, shredded
Preheat oven to 400. Spray a baking sheet with nonstick spray. Scrub the potatoes and lay them on the baking sheet. Roast in the oven until soft - should take about an hour - check at 40 mins depending on the size of the potatoes. Slice the potatoes in half. Scoop out the flesh and put it in a medium-sized bowl. Leave a little flesh in the potato to create a wall. Set the skins aside. Mash the flesh up in the mixing bowl - add the lime juice, garlic, cumin, chili powder, and chipotle pepper, mix until combined. Stir in the spinach. The potatoes should still be hot enough to wilt the spinach. Put the skins back on the baking sheet. Stuff them with the mixture and top with cilantro & sweet potato. Put them back in the oven for about 20 minutes, until the cheese is bubbling & starting to brown.
