Ingredients
- 2 4 oz chicken breasts
- 1 t salt free Mexican seasoning
- Olive oil spray
- 2 T enchilada sauce
- 1 oz (1/2 c) light cheddar
- 1 T chopped fresh cilantro

Preparation
Step 1
Preheat oven to 350. Season each chicken breast with seasonings. Place a large nonstick skillet over high heat. When hot, mist with spray. Add chicken. Cook, turning once for 1-2 minutes per side, or until chicken is golden on each side. Remove pan from heat and top each breast with 1 T of the sauce, and half the cheese and cilantro. Place in oven and bake for 4-6 162 calories
