Ingredients
- 3/4 C Buttermilk Baking Mix
- 1/2 C Plain Lowfat Yogurt
- 1 OZ Finely Chopped Almonds
- 1 1/2 C Sliced Strawberries
- 1 C Blueberries
- 1 Tbsp Julienned Orange Peel
- 1/2 C Whipped Topping
Preparation
Step 1
Bake 400° 10-12 Minutes
Preheat oven and spray a baking sheet
with Pam; set aside.
In a medium bowl, combine strawberries,
Blueberries and orange peel. Refrigerate
till use.
In a small bowl, combine baking mix,
yogurt and almonds; mix just to blend.
Drop by 4 rounded 1/4 cup measures
onto baking sheet and bake. Cool on
wire rack.
To assemble shortcakes, slice each
biscuit in half horizontally. Place
each bottom on a plate and layer
with 1 tablespoon whipped topping.
1/4 cup mixed fruit, the biscuit top,
then equal amounts of topping and fruit.
