Ingredients
- The Sauce:
- 3 whole chicken breasts, boned, skinned and halved
- 1.5 cup unbleached flour
- 1/3 cup butter
- 2 tbsp olive oil
- salt and pepper
- 4 tbsp butter
- 4 tbsp finely chopped parsley
- juice of at least 1/2 of a lemon
Preparation
Step 1
wash and dry chicken breasts. Pound them flat with a mallet. Melt butter and oil in a large skillet. Put the flour in a plastic bag and drop the breasts in to coat. Regulate the heat to moderately high and put the chicken breasts in the skillet. Cook approximately 3 minutes on each side. When they are done, salt and pepper them and put them on an oven proof dish and into a 250 degree oven to keep warm while you make the sauce.
Sauce:
Add butter to the chicken skillet & melt, scraping up brown bits in pan. Remove from heat; add 4 tbsp finely chopped parsley, and the lemon juice. Pour hot sauce over breasts and serve.
