Ingredients

- Chambertin
- a little chicken stock
- bouquet garni

- quartered mushrooms
- diced croutons
- chopped parsley
Preparation
Step 1
Brown the pieces of chicken in butter with a pinch of crushed garlic; sprinkle with flour. Cook a few minutes in the oven. Moisten with Chambertin, set aflame, and add a little chicken stock, bouquet garni, and seasoning. Cover and cook 20 min.
Prepare a garnish of small onions, bacon strips, and quartered mushrooms, all sautéed in butter.
Remove the chicken pieces from the pan, reduce the stock, correct the seasoning, and thicken slightly with a little blood.
Pour this sauce over the chicken with its garnish. Simmer everything together ¼ hr.
Serve with diced croutons and chopped parsley.
