Ingredients

• 1 c shortening (half butter)
• 2 c brown sugar
• 2 eggs
• 1/4 c water
• 1 t vanilla
• 4 c flour
• 1 1/2 t baking powder
• 1/2 t soda
• 1/4 salt
• 1 c coconut

Preparation

Step 1

Mix shortening, sugar, and eggs. Stir in water and vanilla. Stir in dry ingredients. Mix in coconut. Chill dough 2 hours. Roll in ball, flatten each into oblong, ¼ inch thick. Press each cookie lengthwise with fork dipped in sugar. Bake at 400 for 8-10 minutes.
