Bacon and Cheddar Potato

Ingredients

  • 1 small, warm baked potato
  • 1 tablespoon each low-fat cheddar cheese a
  • 1/2 ounce diced Canadian bacon
  • 1 teaspoon light sour cream
  • Chopped chives or scallions.

Preparation

Step 1

Halve baked potato and top each half with cheddar cheese and Canadian bacon; broil in oven or toaster oven until cheese is bubbly. Top each half with light sour cream; garnish with chopped chives or scallions.
