Crunchy Lemonade Drumsticks

Ingredients

  • 2 TBL grated lemon zest
  • 1/2 C fresh lemon juice
  • 3 TBL packed light brown sugar
  • 1/3 C buttermilk
  • 12 skin on chicken drumsticks (3 1/2 - 4 1/2 LBS)
  • kosher salt
  • freshly grd. black pepper
  • 2 C panko
  • 1 TBL chopped fresh thyme
  • pinch of cayenne pepper
  • 1/4 C mayo
  • olive-oil cooking spray

Preparation

Step 1

mix 1 TBL lemon zest & lemon juice in lg. bowl
add 1 C water & sugar - whisk to dissolve,
wisk in buttermilk
pierce drumsticks several times w/ fork
season w/ S & P
toss in marinade, cover & refrig 4 HRS or overnight

preheat oven to 400
bring chicken to room temp
put panko, thyme, remaining 1 TBL lemon zest, cayenne, 1 tsp salt & black pepper to taste in lg. resealable plastic bag
shake to mix
put mayo in bowl
set rack on baking sheet
spray w/ cooking spray

remove drumsticks from marinade
dip in mayo
drop into bag
shake to coat
transfer to rack

mist chicken w/ cooking spray
bake until golden, abt 35 min
flip & bake until browned & crisp, 35-40 more min.
cool completely, then pack in airtight container
