Sweet Potato Souffle

Ingredients

  • 3 large or 6 medium sweet potatoes
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 3 eggs
  • 1 tablespoon real vanilla
  • 1/3 cup half & half
  • 1 stick of butter
  • Topping: (use liberally)
  • 1/3 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 3 tablespoons flour
  • 2 generous tablespoons soft butter

Preparation

Step 1

Peel and cook sweet potatoes (like mashed) until tender, drain, mix on medium speed. Beat eggs, sugars, vanilla and half & half. Add potatoes, stick of butter 1 piece at a time. Beat until smooth.

Put into glass casserole dish.

In a bowl combine brown sugar, pecans, etc. cream together w/wooden spoon. Use your hands and sprinke on top of casserole.

Bake at 350 degrees for 30 minutes.
