ONION GARNISH

Though simple, this common condiment really
kicks up the flavor on a taco. For a spicier addition
to your taco, add the optional habanero, lime and
vinegar to make cibolla curtida.
Yield: Makes 1 cup (240 ml)

Ingredients
- 1/2 white or red onion, diced small
- 1 teaspoon salt
- 2 tablespoons minced fresh cilantro
- 1/4 habanero chile, minced (optional)
- Juice of 1/2 lime (optional)
- 1/2 teaspoon white vinegar (optional)
Preparation
Step 1
Mix together in a small bowl and let stand for
30 minutes before serving.
