Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans
  • 1/4 cup diced jalapenos
  • 1 teaspoon dried cilantro or 1 tablespoon fresh cilantro
  • 1/2 cup shredded cheese
  • Phyllo sheets or wonton wrappers
  • 18 tortilla chips
  • nonstick cooking spray
  • salsa
  • sour cream

Preparation

Step 1

Preheat oven to 375 degrees. Spray a cupcake tin with nonstick cooking spray, set aside.

Brown meat and drain. Return back to skillet and mix with taco seasoning with water per package directions, jalapenos, and cilantro. Simmer for 5 minutes. Remove from heat, set aside.

Carefully line cupcake wells with phyllo sheets (2-3 per each). Once your cupcake wells are lined, add a spoonful of beans to each, followed by a crushed tortilla chip, then a spoonful of meat mixture.

Place in preheated oven for 10 minutes. Remove and sprinkle cheese on top of each cupcake, then return to oven for 6-8 more minutes or until the phyllo sheets are golden brown.
