LEMON-GINGER STRING BEANS

Ingredients

  • 2 t olive oil
  • 2 medium garlic cloves, minced
  • 1 T minced fresh ginger root
  • 3 c string beans (fresh or frozen and thawed)
  • 2 T fresh lemon juice
  • 2 t finely grated lemon zest, or to taste
  • 1/8 t salt, or to taste
  • 1/8 freshly ground black pepper, or to taste

Preparation

Step 1

Heat oil in a large skillet over medium or medium-low heat. Add garlic and ginger and cook, stirring, 1 minute.

Add string beans and cook until golden brown, stirring occasionally, about 2 minutes.

Add lemon juice and zest; cover and steam until string beans are crisp-tender, about 2 minutes. Season to taste with salt and pepper.
