No Knead Quinoa Bread

Healthy grainy bread with the best of grains in it, quinoa. Great for sandwiches.

Ingredients
- 6 1/2 water
- 4 Tb coconut oil
- 6 cups white whole wheat flour
- 7 cups AP flour
- 2 cups raw quinoa
- 3 Tb salt
- 3 Tb yeast 1/2 cups vital wheat gluten
- Cornstarch wash
Preparation
Step 1
Mix ingredients in Kitchenaid mixer. Put dough into loosely covered container leave at room temperature for 3-4 hours. Refrigerate for up to 7-14 days. On baking day w/ heavily floured hands remove grapefruit sized ball of dough & shape into loaves. Cover & let rise for 45-60 min. Slash loaves, brush w/ water cornstarch wash sprinkle with seeds. Bake in steamed oven at 450 degrees for 30 min.
