No Knead Oatmeal Date/Raisin Bread

A tasty bread nice for breakfast, bread pudding & French toast!

Ingredients

  • 3 cups water
  • 1/3 cups maple syrup
  • 1/4 cup butter &/or coconut oil
  • 3 cups whole wheat flour
  • 2 cups AP flour
  • 2 cups steel cut oats
  • 1/4 cup vital gluten
  • 11/2 Tb salt
  • 1 1/2 Tb yeast
  • 1/2 cups raisins/dates
  • 1/2 cups nuts
  • Egg wash
  • Coarse raw sugar

Preparation

Step 1

Mix ingredients in Kitchenaid mixer. Put in loosely covered container leave at room temperature for 3-4 hours. Refrigerate for up to 7 days. On baking day with heavily floured hands remove grapefruit sized pieces of dough & shape into loaves. Cover & let rise for 45-60 min. Slash loaves, brush w/ egg wash, top w/ raw sugar. Bake in steamed oven at 375 degrees for 45-50 min.
