Preheat oven to 350°. Sift together first 9 ingredients into a mixing bowl. Beat in eggs until batter becomes thick and pale yellow, 3 minutes. Slowly beat in oil and vanilla. Add the wet ingredients to the dry and mix until combined. Fold in carrots. Pour batter into 2 greased 8-inch round pans lined with parchment paper. Bake 35 to 40 minutes or until a toothpick inserted in the center of the cakes comes out clean. Allow layers so cool completely before icing with your favorite cream cheese frosting.
