Spinach Stuffed Mushrooms

Ingredients
- 24 button mushrooms
- 1 Table spoon butter
- 1/2 small onion, minced
- 2 cups baby spinached packed
- 1/2 teaspoon salt
- 1/2 cup cream cheese
- 1/4 cup chopped parsley
- zest of 1/2 lemon
- pinch of freshly grated nutmeg
- 1/4 cup breadcrumbs

Preparation
Step 1
Remove mushroom stems & coarsely cup srems
Place caps on parchment lined baking sheet
Heat butter in a wide frying pan over medium heat - add onion cook 1-2 minutes, add chopped stems & cook 4 minutes, add spinach & salt
Increase heat to high until no moisture left in pan
Transfer to a food processor, add cream cheese, parsley, lemon & nutmeg & buzz until smooth
Season to taste
Preheat oven to 350
Mound filling into caps @ sprinkle with breadcrumbs
Bake 15-20 minutes or until lightly browned
