Pizza Dough - Our Original Same Day Recipe x 1 1/2

2010-used bread flour, double recipe (approx 7 cups of flour) yielded 11 calzones

2012-used bread flour, this 1 1/2 recipe yields 6 personal pan sized pizzas

Ingredients

  • 1 1/2 pound flour (approx 5.625 cups)
  • 1 1/2 tablespoons vegetable oil
  • 1 1/2 tablespoon yeast, quick rise (three 1/4 oz pkgs)
  • 1 1/2 teaspoons salt
  • 12 ounces warm water (approx 95-100 degrees) - will need more water to get to the proper consistency
  • 1 1/2 teaspoons sugar

Preparation

Step 1

Combine yeast, some water & sugar in bowl

Let rest for a few minutes-the yeast should start to bubble

add oil, salt, rest of water & most of flour

Mix all & knead, add additional flour as necessary to make non sticky dough, add water if too dry

put into oiled bowl, let rise in warm place til doubled

punch down, divide into 2 balls, let rest a few minutes

Spread out into circles

Spray pizza pan with non stick spray (sprinkle with corn meal if desired)

place dough on pan & let rise about 15 mins

At this point, top with sauce & toppings & bake at 450 til bottom is browned or
Top dough with a little sauce & bake at 450 for a few mins, remove from oven, top with additional sauce, cheese & toppings & continue to bake until bottom is browned & cheese is melted
OR top with a liitle sauce, bake partially & freeze to use at a later time
