  • 8 chicken thighs (3lbs)
  • salt and pepper
  • 1 small clove garlic
  • 4 kiwis
  • 1 T green hot sauce
  • 1 T honey
  • 2 t EVOO

Step 1

Preheat oven to 400. Season chicken with salt and pepper and roast on foil lined baking sheet til juices run clear. About 40-45 min.

Meanwhile, in pot of boiling salted water; blanch garlic for one minute; drain, peel and mash with 1/4 t salt. Halve 3 kiwish lengthwise and scoop seeds into fine mesh sieve set over bowl; press to extract juice. Scrape remaining kiwi flesh into mini chopper; add kiwi juice, garlic paste, hot sauce and honey; puree. Peel and chop remaining kiwi. Serve chicken with sauce and remaining kiwi on top.
