SOFRITO - I

Ingredients

  • 1/4 cup olive oil
  • 1 medium chopped onion
  • 1 minced garlic clove
  • Salt
  • Pepper
  • 1/2 green pepper
  • 1/2 cup tomato sauce
  • 1 teaspoon oregano

Preparation

Step 1

Heat oil in skillet, add onion, garlic, salt and pepper. Cook until onions become soft and add other ingredients. Stir until heated. Remove from heat. Refrigerate in covered container.

SOFRITO - II

1 onion peeled, 3 chili peppers seeded, 2 cloves garlic, 1 green pepper, 1 bunch cilantro stemmed, 1/4 teaspoon oregano.

Mix onion, chili pepper, garlic, green pepper, cilantro and oregano. Whirl in blender.

SOFRITO - III

3 tablespoons oil, 1/4 to 1/2 cup lean cured ham chopped, 1 medium onion finely chopped, 2 red or green bell peppers seeded and chopped, 1 cloves garlic minced, 1/4 chopped fresh cilantro, 1/2 teaspoon dried oregano, salt, freshly ground pepper to taste.

Heat oil in skillet over low heat. Saute ham, onion and bell peppers. Add remaining ingredients. Cook another 5 minutes, stirring occasionally. Makes about 1 cup.
