Ingredients

  • 1 1/2 c oats
  • 1 1/2 c flour
  • 1 c brown sugar
  • 1/2 t soda
  • 1/4 t salt
  • 1 c butter
  • 1/2 t cinnamon
  • Filling: 2 T cornstarch, 1 1/2 c sugar, 1/2 c water, 3 1/2 c rhubarb

Preparation

Step 1

Combine ingredients except filling. Cut in butter. Press ½ - 2/3 in bottom of pan. Bake 10 minutes. Combine cornstarch and sugar. Add water and rhubarb and cook until thick, about 5 minutes. Pour over crust. Sprinkle with remaining topping. Bake 20 minutes.
Note: add ½ c nuts to oat mixture if desired, or granola instead of oats. Also try ½ c pineapple for ½ c rhubarb.
