Whole Wheat Bread

Ingredients

  • 2 pkgs yeast (or 4 1/2 tsp jar yeast)
  • 2 1/4 c water
  • 1/4 C honey
  • 1 T salt
  • 3 T shortening
  • 3 C whole wheat flour
  • 3 - 3 1/2 C bread flour

Preparation

Step 1

1. Mix yeast with whole wheat flour
2. Mix water, honey, salt and shortening and heat to 120 -130 degrees (shortening does not need to melt)
3. Add water mixture to flour and beat for 2 min at medium speed
4. Add bread flour gradually until dough no longer clings to sides of mixer
5. Knead with mixer for 8 - 10 min until smooth and elastic
6. Placed in greased bowl;spray top with cooking spray; cover with cloth
7. Place in warm place (oven preheated to 200 with a shallow pan of water in the bottom and oven turned off) until double – about an hour
8. Punch dough down and shape into loaves. Divide in two. Put into greased loaf pans and place in warm place until doubled (about an hour) May brush tops with margarine if desired
9. Preheat oven to 350 and bake about 30 min until golden brown and hollow-sounding
