Ingredients

  • 3 large fresh tomatoes
  • 1/2 small onion - chopped
  • 3 garlic cloves - minced
  • 2 tbsp butter
  • 4 tbsp parmesan cheese
  • 2 tsp basil leaves finely chopped
  • 1/2 tsp oregano
  • 1/4 cup whipping or 1/2 & 1/2 cream
  • salt & pepper - to taste

Preparation

Step 1

1. Boil the tomatoes for 4-5 mins or until tender.

2. Chop the onions and saute them in some oil until they look pinkish and glazed. Add the minced garlic and saute for another 1 minute. Add tomatoes and herbs and use potato masher or hand held mixer and partially blend ingredients.

3. Add the butter, salt and pepper, and let it simmer for a few minutes.

4. Whisk the cream and the Parmesan cheese in a separate bowl. Reduce the flame to low, and add this mixture to the tomato sauce.

Meanwhile, cook pasta as instructed
