Pork Chops with Sauerkraut & Apples

Cal. 278; Protein 25 gms; Carbs: 32; Sodium 414 - I used only 2 porkchops, 1/2 cup water & 1/2 cup white Chardonnay wine; 1 onion; 1 small pkg of sauerkraut (probably about 1 large cup); 1 large sweet potato; 1 apple.

Ingredients
- 2 medium sweet potatoes, peeled & cut 1/2 inch thick
- 2 medium onions- chopped
- 2 Granny Smith applies, cored & sliced
- 1 Tbsp. brown sugar
- 1/4 tsp. cinnamon
- 1/2 tsp. pepper
- 1/2 cup water
- 6 1-inch boneless pork chops
- 2 cups refrigerated sauerkraut - rinsed
Preparation
Step 1
Place sweet potatoes and onions in a 4-quart or larger slow cooker. Cover with apples. In a small bowl, combine brown sugar, cinnamon and pepper and sprinkle over applies. Add water.
Meanwhile, in a large nonstock skillet, cook pork chops on medium-high 2 minutes on each side to slightly brown. Place over apples. Spread sauerkraut over chops. Cover & cook 5-6 hours on LOW or until chops are 145 degrees.
