Quesadilla Wraps

Ingredients

  • 1 tortilla wrap (medium or large depending how much your child eats)
  • Salsa
  • cooked veggies of choice (onions, peppers, corn). Leftovers work really well here.
  • Shredded chicken, optional
  • Grated sharp cheddar or Monterrey Jack cheese
  • Sour cream (optional)

Preparation

Step 1

Heat your pan and get all your ingredients ready. Put your tortilla into your hot pan. Spread a small amount of salsa on your tortilla (don’t go all the way to the edge). Top with small amount of veggies, chicken and about 1/4 cup of shredded cheese. Add a dollop of sour cream.

After you’ve placed all of your ingredients and the tortilla is heating up, use your spatula to fold your tortilla from all four sides, making it look like a burrito. Carefully flip your wrap and have the hot pan ‘toast’ your tortilla. The heat will stabilize your wrap and will make your cheese melt.

These taste great warm or at room temperature. Some people don’t like to heat up sour cream – if you don’t, you can omit the sour cream in the wrap and add a little container of sour cream for dipping in the lunch box. Enjoy!
