Black Bottom Cupcakes

Ingredients

  • Cream Cheese Mixture:
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1 tsp. baking soda
  • 1/4 c. cocoa
  • 1/2 tsp. salt
  • 1 c. water
  • 3/4 c. oil
  • 1 Tbsp. vinegar
  • 1 tsp. vanilla
  • 8 oz. cream cheese
  • 1 egg
  • 1/3 c. sugar
  • 1/8 tsp salt
  • 6 oz chocolate chips

Preparation

Step 1

Cream cheese mixture:
Combine cream cheese, egg, sugar, salt and chocolate chips. Beat well and set aside.

Sift together flour, sugar, baking soda, cocoa and salt. Add water, oil vinegar and vanilla and beat well until combined. Fill muffin cups lined with paper lines 1/3 full. Top each with heaping teaspoons of cream cheese mixture. Sprinkle with chopped walnuts. Bake at 350 degrees for 25 minutes. Makes 22 cupcakes.
