Ingredients
- Clean portobello mushrooms, drizzle w/olive oil, roast in oven upside down to drain mushroom liquid,
- Place on grilling rack & turn right side up
- Fill w/quinoa or rice/wild rice pilaf -make as confetti rice - add a variety of: chopped red peppers, green onions, corn, black beans, carrots, spinach, artichokes, green beans & seasonings
- Add olive oil & lemon juice
