Scallops Oregantana with Minced Garlic and Parmesan
Combine bread crumbs with salt, pepper, Parmesan cheese, and oregano. Remove ¼ cup of this mixture and set aside. 2 Heat pan, and add butter. When melted, add garlic and shallots, and sauté for 2-3 minutes on medium-high heat. 3 Add a pinch of salt and pepper, then add scallops, and toss everything around in pan. 4 Toss in bread crumbs, and mix until sauce begins to thicken. 5 At this point you will add in the scallops and cook for about 4 minutes. Remove from pan and place in baking dish that you have coated well with butter. Top the scallops with ¼ cup of mixture that you set aside and broil on high for 2 minutes. 6 Plate and serve!
