Hearty White Bean Chili

Ingredients
- 2 Tbsp olive oil
- 3 lb boneless skinless chicken breasts , diced into med size pieces
- 1 cup finely diced onion
- 4 garlic cloves, minced
- 1 cup chicken stock
- 1 can 28 oz diced tomatoes
- 1 can 28 oz tomato sauce
- 3/4 cup diced green chiles
- 2 tsp ground cumin
- 2 Tbsp dried parsley
- 1 Tbsp dried oregeno
- 1/4 tsp cayenne pepper
- 1 tsp kosher salt
- 2 tsp pure chocolate extract
- 1 can 19 0z white kidney beans, drained
- 1/2 cup freshly grated parmesan cheese

Preparation
Step 1
Heat olive oil in med sauce pan over medium-hi heat
Add chicken and cook for 4 to 5 min or until brown.
Remove chicken from pan with slotted spoon, set aside
Add onion to saute pan and cook until caramelized, stirring occasionally
Add garlic and cook for 1 - 2 min
Pour in chicken stock, scraping bottom of pan with a wood spoon to deglaze.
Pour stock mixture into a large saucepot and add cooked chicken, tomatoes, tomato sauce, chiles cumin parsley, oregano, cayenne pepper and salt.
Cover and simmer for 30 minutes; stirring occasionally
Add chocolate extract and white kidney beans.
Cook for about 10 min
