Chopped Nicoise Salad

Ingredients

  • 4 small red potatoes (about 1/2 pd. total)
  • 1/3 pound fresh green beans
  • 1 (12 oz)can chunk light tuna packed in water, drained
  • 1/2 cup chopped Greek or Spanish olives
  • 1/4 cup red onion, diced
  • 2 medium ripe tomatoes, seeded and diced (about 2 cups)
  • 5 cups chopped Romaine lettuce
  • 2 tbs. olive oil
  • 1/4 cup fresh lemon juice
  • 1/2 tsp Dijon mustard
  • salt and pepper to taste

Preparation

Step 1

Boil a couple of inches of water in a large pot with a fitted steamer basket. Put the potatoes in the steamer, cover, and steam for 15 minutes. Add the green beans and steam for 5 minutes more, until the green beans are crisp tender and the potatoes are just tender all the way through. Transfer them to a dish and set in the refrigerator to cool, or plunge into a bowl of ice water to cool quickly.
Place the tuna, olives, onions, tomato, and lettuce in a large serving bowl. Dice the potatoes and green beans and add then to the bowl and toss. In a small bowl, whisk together the oil, lemon juice, and mustard, then season with salt and pepper. Pour the dressing over the salad, and toss well, and serve.
