Ingredients

  • 2 1/2 c all purpose flour
  • 1 c whole wheat flour
  • 3 c sugar
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 2 tsp cinnamon
  • 3/4 tsp nutmeg
  • 1 c oil
  • 2/3 c water
  • 4 eggs
  • 1 16 oz can pumpkin (or 2 c fresh cooked pureed pumpkin)
  • 1 c chopped pecans

Step 1

350 degrees Bake 60 - 70 minutes
GREASE BOTTOM ONLY of two 9x5 loaf pans or three 8x4 loaf pans. In large bowl, combine all purpose & wheat flour, sugar, baking soda, salt, cinnamon, nutmeg; mix well. In medium bowl, combine oil, water, eggs and pumpkin, blend well. Add to flour mixture; beat 1 minute at medium speed. Fold in pecans. Pour batter into greased pans.

Bake 60-70 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes, remove from pans. Cool completely.

** Half of the Batter equals 4 mini loaves. Mini loaves bake @ 325 for 50 minutes.
