Ingredients
- Topping:
- 3 cups sugar
- 1 15oz can canned pumpkin
- 1 cup canola oil
- 4 eggs
- 2/3 cups water
- 3 1/2 cups ap flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp cloves
- 1/2 cups pecans
- Optional: 1/2 cups cranberries
- 1/3 cup flour
- 1/4 cups brown sugar
- 1/2 tsp cinnamon
- 2 Tb cold butter
- 1/4 cup pecans
Preparation
Step 1
In a large bowl beat sugar, pumpkin, oil, eggs & water. In med bowl combine flour soda, salt, cinnamon, nutmeg, & cloves. Gradually beat dry ingredients into wet. Stir in nuts (& cranberries if desired). Put batter into greased pans & $ combine topping ingredients until crumbly (cut butter into dry ingredients). Sprinkle topping over loaves & bake at 350 degrees for 45-65 minutes.
