Turtle Cookies

The classic flavors of turtle candy ... chocolate, pecans, and caramel ... in a soft and insanely delicious cookie.

Ingredients

  • 2 1/2 cups flour
  • 1/2 cup cocoa, very good quality
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup butter
  • 1 cup light brown sugar
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 12 ounces semisweet chocolate chips
  • 1 cup pecans, chopped
  • 3 dozen individually wrapped caramel candies

Preparation

Step 1

*Preheat oven to 350 degrees fahrenheit.

Whisk together flour, cocoa, salt, and baking soda.

Mix the butter and sugars until light and fluffy. Add the eggs and vanilla and mix thoroughly.

Mix flour mixture into the sweetened butter, don't over mix, only enough to incorporate flour. Mix in the chocolate.

Roll the mixture into 1inch balls and dip about half of the ball into chopped pecans.

Place balls on parchment lined baking sheet, pecan side up taking care to space about 3 inches apart. Carefully push one caramel candy about half way into each ball's center.

Bake 10 or 12 minutes at 350 degrees fahrenheit. Take care not to over-bake or cookies will get brittle.

Cool for at least 10 minutes before removing to a wire rack to cool completely. Drizzle the tops with melted chocolate (optional).
