Strawberry Lime Mousse in Chocolate Cups

  • 1 envelope unflavored gelatin
  • 3 Tbsp. cold water
  • 1/4 cup boiling water
  • 2 cups heavy whipping cream
  • 1 1/2 cups confectioners' sugar, divided
  • 1 pound fresh strawberries, hulled and sliced
  • 1 Tbsp. lime zest
  • 1 Tbsp. fresh lime juice
  • 2 (6 oz) boxes dark chocolate dessert shells
  • Garnish: lime zest

Preparation

Step 1

In a small bowl, soften gelatin in cold water. Let stand for 2 mins. Stir in boiling water until gelatin dissolves; set aside.

In a medium bowl, beat whipping cream at medium-high speed with an electric mixer until slightly thickened. Gradually add 3/4 cup sugar, beating until stiff peaks form. Stir in gelatin mixture.

In the container of an electric blender, combine strawberries, lime zest, lime juice, and remaining 3/4 cup sugar; process until smooth. Gently stir strawberry mixture into whipped cream. Cover, and chill for at least 4 hours.

Spoon mousse into chocolate shells. Garnish with lime zest, if desired.

*The mousse can be made one day ahead or hours before. Cover, and store in refrigerator until time to fill chocolate shells.
