Stuffed Chicken Breasts

- Filling:
- 6 unbreaded chicken breast filets, thawed
- salt to taste
- pepper to taste
- 1/4 cup Italian-style breadcrumbs
- 1 cup shredded pizza cheese blend
- 1 cup sliced pepperoni
- 1 tsp. Italian seasoning

Step 1
Preheat oven to 350 degrees.
Place chicken in a plastic bag and pound to flatten to a 3/8" thickness.
Transfer chicken onto a plate
Divide filling ingredients onto center of each breast.
Wrap chicken around filling and secure with toothpicks.
Season with salt and pepper. Lightly spray with cooking spray and top with breadcrumbs.
Place in a baking dish and bake 25 - 30 minutes or until cooked through.
TIP: For a delicious twist, wrap stuffed chicken in puff pastry and serve with your favorite sauce.
ALTERNATE FILLING:
6 1/2 x 2" slices mozzarella cheese
1 tsp. Italian seasoning
