Ingredients
- QUESO FUNDIDO WITH CHORIZO
- 1 pkg (10 oz.) Cacique Manchego cheese, shredded
- 1/2 pkg. Cacique Beef Chorizo (or Pork Chorizo)

- DARK BEER QUESO FUNDIDO
- 1 pkg. Cacique Manchego, shredded
- 3 oz. Dark Beer, let sit at room temperature for 2 hours
- 1 jalapeno pepper, seeded and minced
- 1 clove garlic, minced

- QUESO FUNDIDO DEL GRITO
- 1/2 cup cacique Pork chorizo, or Beef chorizo
- 1 pkg. Cacique Queso Quesadilla, chredded
- 1/2 cup poblano pepper, seeded and sliced 1/2" strips
- 1/2 cup white onion, sliced 1/2" strips
- 1/2 cup tequila
- 1/4 cup finely chopped tomato
- 1 Tbsp chopped fresh cilantro

- CORN & CHORIZO QUESO FUNDIDO
- 1/2 pkg. (5 oz) Cacique Longaniza Fresco
- 1 pkg. (10 oz) pkg. Cacique Queso Quesadilla, shredded
- 1/4 cup green onions, diced
- 1 Tbsp. cilantro, chopped
- 1/2 can diced tomatoes, with juice
- 1/2 can green chilies, with juice
- 1/2 can yellow or white corn
- 1/4 tea. ground cumin
- 1/4 tea. cayenne pepper

QUESO FUNDIDO WITH CHORISO:
In skillet, cook chorizo until it crumbles (about 10-15 minutes). Drain. Add shredded cheese one handful at a time and stir until meled. Serve immediately.
DARK BEER QUESO FUNDIDO: In medium saucepan over medium-high heat, whisk beer. Bring to a mdium boil then add chese in small batches, stirring to melt each portion before another is added. When all the cheese is melted, stir in garlic and jalapeno, and pour into hot fondue pot or heated serving bowl Serve immediately.
QUESO FUNDIDO DEL GRITO: Preheat ovn to 350 degrees.
In a skillet, cook the chorizo until almost done, drain well. Add the poblano and onion and cook until tender. Completely remove pan from heat. Carefully add tequila. Return to heat and simmer, uncovered, for 15-20 seconds or until most of the tequila hs dissipated.
In a medium casserole or glass dish, stir the cheese with chorizo, peppers and onions. Bake uncovered about 10-15 minutes or until cheese is melted through and slightly golden brown on top. Sprinkle with tomato and cilantro.
Serve immediately.
(if doubling the recipe, do not double the tequila. Continue to use only a 1/2 cup)
CORN & CHORIZO QUESO FUNDIDO
Heat skillet over medium heat and cook Longaniza for about 10 minutes, stirring occasionally until it crumbles. Drain. Stir in green onions, cilantro, tomatoes, green chilies, corn, cumin and cayenne pepper. Bring to a low boil, reduce heat and simmer uncovered for about 10 minutues, stirring occasionally. Add shredded cheese. Stir to belnd for an additional 8-10 minutes. Serve immediately.
